Diet Day One

Well, today is the first day of the "DIET". Trying to find good recipes with VERY few carbs that still tastes good is not as much fun as I was hoping. lol. It took me three hours today to find five interesting looking dinners.

Michael is an AMAZING husband and will let me cook anything for him and will eat it no matter what. Poor fellow, I found this out when a few weeks ago I used an online recipe for beef stroganoff. I cooked the beef EXACTLY how they said to. It was absolutely not edible, even Penny had to hew on it like jerky. I had fed Michael first then took Penny outside for a quick walk before I sat down to eat. When I came back in Michaels plate was clean. I served myself and took a bite. It was HORRENDOUS!!! I have never had such a bad dish. It was dry and chewy and tough and flavorless. Just the worst meat even I have ever cooked. (and thats saying something)
 I looked at Michael again, clean plate, and Penny had been with me so she didn't get any, he had eaten it ALL. I asked him what he had thought of it. He said he didn't want to hurt my feelings so he ate it! I laughed and cried. I felt so bad that he felt that he needed to eat that dog meat. How sweet and how silly. I sure love him. I made it clear that he never had to eat anything that I made that wasn't good to him. :)

She calls this the taco bake, I call it Turkey Taco Bake :)
I made a small mistake in my math (BIG SURPRISE) and only used 16 oz of meat, instead of the 23 I was supposed too. Oops. I did some of my own things, like didn't use peppers she called for and used lime and cilantro marinated tomatoes, which I really liked! Also I used leaner meat, and higher fat cheese. All I know is it was GOOD and I will be happy to eat the left overs one night!
